/> <em>BY Thomas Swimme</em></p><p>The excitement of catching a shark is a joy that is still just as vibrant today as it was when I was a child. I can remember early morning salmon fishing trips with my uncles and cousins when I’d let my line drift a little too deep and end up hooking into a spiny dogfish. While this was not ideal on a salmon fishing trip, nor appreciated by my relatives, catching a shark was one of my greatest thrills. I’m still not sure if dogfish was my first fish but I am sure it was my most prized. The way they circle back and forth when being reeled in and the first sight of a fin or an eye has always given me the chills…..</p><p><strong>FRIED SHARK FILLETS WITH SAUTÉED PEPPERS AND CILANTRO CHIMICHURRI</strong></p><p><strong><em>Ingredients:</em></strong></p><ul><li> 6 ears of corn</li><li> Olive oil</li><li> 4 large bell peppers (red, yellow, orange), sliced</li><li> 2 large onions, sliced</li><li> 2/3 head of garlic, chopped</li><li> Salt and pepper</li><li> 1 lemon, juiced</li><li> 1 spiny dogfish, filleted and prepared</li><li> All-purpose flour</li><li> 3 lemons</li></ul><p>Cilantro Chimichurri, recipe follows</p><ol><li>Boil the corn. Drain and put into ice bath. When cool, cut off kernels and reserve.</li><li>Put pot over medium-high heat and add olive oil. When heated, add peppers and onions, stir, reduce to medium heat and cover. We are not trying to color the vegetables so keep the heat low and stir regularly.</li><li>Add the chopped garlic, salt and pepper. Add corn to warm. Add juice of 1 lemon to brighten the flavor.</li><li>Heat a skillet with a generous amount of oil over medium-high heat. Cut the shark fillets into 4-ounce portions. Pepper and flour each portion and pat off excess (the meat is strong enough not to need salt). When oil is hot enough, fry fillets until golden and crisp on both sides.</li></ol><p>To Serve: Place the fillets over the bell pepper medley on the plate. Squeeze lemon juice over the fillets. Spoon chimichurri sauce around. Tailor the amount of chimichurri sauce to balance the flavor of the fish. Serve with a grassy New Zealand sauvignon blanc or light Moscato to pair with the chimichurri and combat the saltiness of the shark fillets.</p><p><strong>CILANTRO CHIMICHURRI</strong></p><p><strong><em>Ingredients:</em></strong></p><ul><li> ¼ cup Champagne vinegar</li><li> 1/3 head of garlic, chopped</li><li> 2 lemons</li><li> Honey</li><li> 1 large bunch cilantro, minced</li><li> 1/3 bunch parsley, minced</li><li> 1 cup olive oil</li><li> Salt and pepper</li></ul><p>In a bowl combine vinegar, chopped garlic, juice of 2 lemons, honey, cilantro and parsley. /> 12 ds teriyaki sauce<br
/> 2 tb A-1 steak sauce<br

Those concerned with healthier choices in their diet have gained a supply of low-fat meat compared to beef.</p><blockquote><p>“Venison is a healthful source of protein and many West Virginia families supplement their diet with nutritious venison harvested in the Mountain State,” noted Curtis Taylor, Chief of the Wildlife Resources Section of the West Virginia Division of Natural Resources (DNR).  “Venison has fewer calories and nearly five times less fat than the equivalent serving of beef.”</p></blockquote><p>After the harvest, hunters can ensure their selected venison cuts will be the best quality and flavor if they take a few simple steps in caring for their game. Meat should not be exposed to excessive heat and moisture and should be cooled as quickly as possible to avoid spoilage.</p><p>Hunters are not the only West Virginians who benefit from deer harvested in the state.  Over the past 17 years, the DNR has sponsored the Hunters Helping the Hungry Program (HHH). Add elk meat a few pieces at a time and brown. Remove from pan and set aside. Fry bacon until crisp. Set aside with elk. Add onions and mushrooms to pan and cook until golden brown. Stir in flour. Add port, juniper berries, broth and thyme. Bring to a boil. Add elk and bacon and simmer for about 30 minutes. With a slotted spoon, place elk in a greased, deep-sided casserole dish. Continue cooking sauce on medium heat until sauce thickens. Salt and pepper to taste. Pour sauce over elk. Roll out pastry to fit casserole dish and place atop meat mixture. Glaze with an egg glaze, made by beating an egg with tablespoon water. Bake at 400 degrees until crust is golden brown. As a result, many of us are looking for ways to save money, eat better and simplify our lives.</p><p>With the holidays fast approaching and food safety scares regarding meat, spinach, tomatoes and other foods still in recent memory, now is the best time to pay close attention to where our food comes from and try eating locally harvested foods.</p><p>According to James Earl Kennamer, Ph.D., senior vice president of conservation programs for the National Wild Turkey Federation, there is no better way to support your local economy, get a jump on your New Year&#8217;s resolution to eat better and know your food is fresh than to hunt locally and eat your catch.</p><p>&#8220;Hunters have hunted local game and provided savory, fresh turkey, venison, elk and fish for their families for hundreds of years,&#8221; Kennamer said. &#8220;Wild game is healthier, and pursuing it is not only a chance to get outside and exercise, but it&#8217;s an activity that can be done with the whole family most of the time without ever leaving your home county.&#8221;</p><p>The NWTF is a national nonprofit conservation organization that was founded in 1973 and has worked with wildlife agencies to restore wild turkey populations from 1.3 million wild turkeys to nearly 7 million today. For example, wild turkeys feast on acorns, grasses, fruits and a variety of other plants instead of growth hormones or supplements, which are fed to many farm-raised turkeys.</p><p>2) Hunting and eating local food promotes regional uniqueness. You can buy frozen foods anywhere, but locally harvested wild game such as a turkey, deer, elk or fish will have a flavor all its own.</p><p>3) Heading outdoors to hunt and fish is great family time. Enjoying the outdoors as a family provides opportunities to mentor youth, carry on the outdoor tradition and create memories to last a lifetime.</p><p>4) Wild game is healthier. Because wild game scavenges in the wild for its own food, it gets more exercise than animals raised for commercial sale and is lower in fat. For example, wild turkey meat has roughly 2 percent more protein, a half percent less fat and slightly less cholesterol than farm-raised turkey meat due to its lower fat content. The quantity of fat is not only generally lower in wild game, but it is also healthier, since it contains less saturated or &#8220;bad&#8221; fat.</p><p>5) Hunting stimulates your local economy. Every dollar you spend while hunting and fishing in your area helps support not only hunt-specific jobs like meat processors and hunting guides, but also area businesses such as gas stations, restaurants and grocery stores.</p><p>6) Hunting supports wildlife conservation efforts. License fees purchased by hunters and anglers fund conservation programs that help state agencies continue improving conditions for all wildlife and access to the outdoors.</p><p>7) Hunting locally saves money. You don&#8217;t have to travel far to enjoy a day outdoors and harvest your own wild game. Times are tough, but chances are likely there is a spot nearby where you can hunt, fish or enjoy a day outdoors, saving gas money and time and decreasing pollution.</p><p>8.) Wild game is more flavorful. Eating just-caught fish or fresh venison after proper processing will let you enjoy its natural flavor at the peak of freshness &#8211; minus any artificial flavorings or preservatives.</p><p>9) Heading outdoors is good exercise. You can burn 285 calories per hour by heading afield to hunt, or 175 calories per hour by casting a line &#8211; and you can hunt or fish near home. -<br

Clean and wash turkey, pat dry.  Salt the cavity, then stuff with halved lemon, halved onion and the rest of the fresh herbs whole, place on rack in turkey pan.  Pour melted butter with herbs on the turkey. There is no entry fee to compete and there will be gift card prizes in both the main course and dessert/sweet bread category. A youth classification for cooks 16 years-old and younger will be judged separately. All cooks will receive a discount at Cabela&#8217;s the day of the event.</p><p>This is not a sanctioned event, but a friendly, open to the public competition and an opportunity to just have some fun. Set up begins at 10:00am, dessert judging will begin at 1:00pm; main course judging at 2:00pm. The public is invited to stop by and taste test the entries following judging.</p><p>Volunteers from the International Dutch Oven Society will be available to offer advice and assistance to newcomers and experienced cooks alike.</p><p>Cooks should bring all of their equipment, coals and ingredients.
