
The Master Cutlery Deep Water 8-inch Fixed Blade Knife is advertised as a fillet knife. It would be a good fillet knife for larger fish such as stripers, redfish, yellowfin tuna, etc. But I’m running up to the mountains tomorrow for at least the rest of the week deer and elk hunting. My daughter just had a baby two weeks ago, so before I left, I wanted to smoke a deer hindquarter so she and her husband wouldn’t have to cook for a few nights. Plus, I’d have some to take up hunting, and my wife would also have plenty to eat while I was gone.
So, with the above said, I’ve been smoking the hindquarter since 4:30 this morning and then threw it in the oven to slow cook and finish it off. When I tried to lift it out, it just fell off the bone. Good, it is super tender.

I then slapped it on the cutting board to chop it into 1/2-inch chunks so we could make some BBQ sandwiches which will rival any Texas Chopped Beef sandwich that you’ve ever had. I had a Master Cutlery Deep Water 8-inch Fixed Blade Knife that I wanted to test on filleting fish, but due to my immediate need, I thought, gee, that’d be a great time to test it out.
I opened the clamshell package, washed the knife and then started slicing the hindquarter. Wow! It came from the factory razor sharp, which is not always the norm on a lot of knives.

I chopped up the venison in a hot second, and before you had time to bat an eye, we were feasting. They are that good. My little wife ate three!
So why do I like the Master Cutlery Deep Water 8-Inch Fixed Blade Knife? It has many attractive features. Let’s start with the grip.
The Master Cutlery Deep Water 8-inch Fixed Blade Knife has a full-sized handle that fills your hand. The handle has a soft, cushiony feel that is not sticky and yet while working, it does feel glued to your hand.
It has a finger guard that stabilizes your hand, and the front top of the handle is slightly flattened out, which allows for a good spot to press your thumb against. Due to all of the above, you’ll have a firm grip on the Master Cutlery Deep Water 8-inch Fixed Blade Knife.

As stated at first, the Master Cutlery Deep Water 8-Inch Fixed Blade Knife is advertised as a fillet knife, and it will work fine as described for larger fish, but it is also a great knife to use for trimming briskets, slicing steaks off of a lip-on rib or slicing any type of steaks for that matter. Or chopping briskets.
It comes with a black nylon sheath, which you’d for sure want if you’re using it on your boat to fillet fish. That way, while bouncing around in your boat, it won’t get dull, and it will be safer to carry. The sheath has three brads, which should help prevent the knife from slicing through the sheath and cutting you.
It also has a lanyard hole in the back of the handle, but I wouldn’t have a lanyard on this knife design.
